The Hawaiian Pizza Philly Chicken Cheese Steak

Whaaaaaaaat?!!!! Pizza? Cheese? Chicken? All called steak? Perhaps! but all delicious! It’d be cool to take it up another notch by changing it to almost a chicken parm sandwich, almost a hawaiian pizza. It’s got a great contrast of flavors and layers of texture too. Definitely a good one to fill up on before taking a nap while watching a sporting event!

How to Make a Philly Cheesesteak with.. . Steak-ums

So what is a Steak-Um? It’s a flat frozen sheet of beef, it’s in the frozen aisle and yes it only says BEEF on the ingredients section. Is it ground, is it shaved? I have no idea, but when you open the box/plastic, there are between7-16 beef sheets depending on which box you get. The sheets are separated by parchment paper and the beef sheets are also 2 sheets of beef.

What does this have to do with cheesesteaks? I have been cooking with these weird little beef sheets since I was about 8, and I know how to make them as close to a real Philly Cheesesteak as they can get. image source

Flat Iron Steak Tacos with Papaya Pummello Salsa

Close-up of a taco
That’s right, you’ve never heard of Pummello, but this tropical fruit can be substituted with Grapefruit. The salsa is sweet and slightly bitter, and with Mixed Peppers it completes the dish.

This was inspired by an episode of Dinner Impossible where Chef Irvine had to cook with primarily ingredients he had never used.

The papaya mellows out the bitterness of the pummello. Pummello is a large fleshy fruit that’s similar to a grapefruit, but a little sweeter. Papaya is a weird fruit that’s sweet, but a little bland with a mango texture and more of a melon flavor. Together they make a nice balance, the wine, vinegar, and lime create a strong acidity; the brown sugar and bell peppers add sweetness. It was an awesome taco, and I hope you like it!

Cold Summer Supper Ideas to Beat the Heat!

Close-up of barbequed chicken and salad in a container
With the sweltering heat of summer, who wants to cook or even think about cooking? Even with great air-conditioning, cooking still generates extra heat for the AC to process, not to mention how uncomfortable the cook is in the kitchen. Few even want to go outside long enough to barbecue.

There is always the reliable microwave but a cold supper just sounds so much more refreshing (and easy). There are of course there are the old standbys for a cold supper:

Creamy Eggplant Curry

Have you been avoiding Eggplant because it seams like a unitasker? Well you’re missing out on a great source of vegetable protein, and it doesn’t have to be just fried and used with pasta sauce.

...an Indian and Thai inspired approach, the citrus of the lemon is a backnote to the high powered heat from the hot sauce and curry powder. The cream cheese and peanut butter thicken the sauce and add creamy body, while the soft eggplant adds an interesting savory texture to the dish. It goes great over rice.

Cornish Game Hen with Mushroom Filling

One recipe to rule them all… Nah seriously, this hen turned out beautifully with crispy sweet skin and tender juicy meat. The filling gets infused with the lemon and sauce flavors, it’s almost… almost unbeatable.
...these are really versatile little birds with a slightly more gamey texture than chicken.

This is a recipe for when you want your hole meal cooked in one place, relatively quickly. Once the prep work’s done, you just have to wait for your timer to go off.

Peanut Butter & Fruit Delight with Honey

It’s smooth, creamy, and tart with an unusual choice of French Bread that completes the best Peanut Butter type sandwich!

Strawberry Chipotle Pork Chops

Sauce pasting on meat on chopping board, close-up
Weird right? This combination has an incredibly unique flavor, there’s a bit of a spicy mustard and garlic kick to it that blend with the sweetness of the strawberry and the heat of the chipotle and hot sauce.
These cuts of Pork chop tend to have a side layer of fat, I cut it most of the way off so there’s only a thin layer on the outside. The thin layer will help keep the meat juicy as the fat cooks.

Enjoy this with a Sangria or a fruitier Red Wine.

Cheesy Summer Squash

It’s soft and juicy with a little crunch to it, and coated with cheese it’s the perfect combination of soft and chewy.
Here's a way of making squash that even your kids will like. The way to keep it healthy with cheese is using the Laughing Cow Triangles of cheese.

This is a good, gooey, and cheesy application of squash. It’s low in fat and is a great side dish. It goes well with lighter meats like chicken, turkey, or pork. I hope this has made summer squash something you would consider adding to your diet.

Butterflied Slow-roasted Chicken

Pollo alla diavolo (marinated devilled chicken), Italy
Do you get bored with those bags of frozen chicken breasts? Want something that tastes and looks really rustic? Well why not super slow roast a chunk of chicken? This recipe requires butterflying the chicken...So what’s butterflying? It’s cutting a piece of meat so that it is in 2 equal pieces. When you’re using a whole chicken, butterflying means cutting out the spine and then the meat lays flat in 2 equal halves. You lose a little bit of the flavor that would come from roasting it with the spine in, but the spine can also be used to make a stock for Chicken Noodle Soup with your left overs.

Bahhumbug Hummus

A quick easy hummus that’s affordable, healthy, and just plain good!

A lot of people out there like hummus, and a lot more people have no idea what is in hummus. In reality, this mysterious foreign fare is actually just ground chickpeas and a sesame paste called tahini. Sure they’ve probably added some stuff to it, but you can do that with stuff laying around your kitchen and make something that tastes even better. So let’s begin!

Muenster, Leek, and Tomato Grilled Cheese

A healthy lunch, the salty bite of the leeks are counter balanced by the acidity of the tomatoes and lightness of the muenster. It goes great on a baguette and with a side of tomato soup.

Leeks are an underutilized flavor force to be reckoned with. While they’re subtle, and usually found with scallions in your Mongolian Beef, leeks can actually take the foreground of a meal and make it theirs. The salty impact of the leek flavor makes this grilled cheese perfectly balanced, and makes mouths water every time!

Seared Pan-Braised Top Sirloin Steak

For those times when you feel like living luxuriously, great steak is always an option. This steak shows off its tender beefy flavor with caramelized sauce on the outside. I do not recommend eating anything else with it, it will taint the befey awesomeness!

Strawberry Balsamic Glazed Pork

This is a lot simpler than it sounds. The sauce is tangy, sweet, and deep with a volume of flavors to it. The pork is tender and melts in your mouth. It’s an all around great dish.

Anyone trying to make a good impression of a first date should try this. It’s easy, and delicious. Also anything with Balsamic Vinegar sounds more special than it is, but it has such a deep rich flavor that it’s understandable why so many people love it. This one’s really easy to do and very impressive.

Lemon Sweet Tea Barbecue Chicken

This one’s a bit unorthodox, but the flavor levels are through the roof. It’s an original take on barbecue chicken.

This is a good variation of a traditional Barbecue Chicken. The sweet tea vodka and lemon juice add a bright pop of flavor to the tangy barbecue. And doing it Baked in it’s own juices just adds to the flavor character of the sauce. The same method below can be enlarged and you could make a slew of Barbecue Chicken for Sunday Football, or parties, or just about anything. image by JWynia

They’re a great combination, and on a light flaky fish like Tilapia, they give it a nice bold flavor. I hope you all enjoy!

This one’s really easy and takes no time to throw together. Tilapia’s great because it’s a very inexpensive cut of fish. It has a great texture and small flavor, which means you can do almost anything with it. You can have southwestern tilapia, Asian influenced tilapia, Caribbean flavors, European flavors. It’s a very versatile fish, and one of the most common uses for it is ceviche, which is the process of cooking fish with acids from lemons and limes(and sometimes tequila). This steals an ingredient from ceviche, but not the meal itself. Enjoy!
