Scrambled Eggs With Sprouts


SERVES 4-6
8 to 10 eggs
1/2 cup milk
4 green onions, including tops, finely chopped
1 teaspoon sea salt or
1 tablespoon tamari soy sauce
1 cup mung bean sprouts or alfalfa sprouts
1 tablespoon of unrefined oil

Beat the eggs with the milk and seasonings. 
Stir in the sprouts. 
Heat a big skillet on medium heat. 
Add oil. 
Next add the beaten egg mixture. 
Cook, stirring frequently, until the eggs are barely set.
Season to taste.
