Avocado Summer Soup

4          ripe avocados, peeled and pitted                        4
2          cups    chicken stock                                       500 mL
1/2       cup       dry white wine                                      125 mL
1/4       cup       whipping cream                                    60 mL
3 tbsp   lemon juice                                                       45 mL
red bell pepper strips and dill sprigs for garnish


l) Chop avocado flesh and puree in food processor or blender.

2) While motor is running add stock, wine, cream, and lemon juice, blend until smooth.

3) Chill soup until ready to serve. Garnish with red pepper and dill sprigs.
